Which Muslim would call himself Gandi
It should be something like Amar Khan
Muslims should have good names and give good names to their children.
Islam does not require all converts to change their names. New Muslims
should only change their first names, IF THEY CONTAIN WRONG OR BAD
MEANINGS. As far as their last names are concerned they should not be
changed unless their parents are alive and accept the change.
In this regard, we’d like to cite for you the following fatwa issued by
Dr. Muzammil H. Siddiqi, former President of the Islamic Society of North
America:
Islam emphasizes that Muslims should have good names and give good names
to their children. It is reported in a hadith that the Prophet (peace and
blessings be upon him) said, "You will be called on the Day of
Resurrection by your names and the names of your fathers, so have good
names." (Reported by Abu Dawud)

As for non-Arab names, there is nothing wrong in using them as names,
so long as they bear good meanings in their language. Although the early
Muslims were purely Arabs living in a pure Arab atmosphere, they found no
harm in non-Arab names, as regards men and women. For example, "Mareyah"
(the Mother of the Believers) who gave birth to Ibrahim, the son of
Prophet Muhammad (peace and blessings be upon him) was known for her
Coptic name

What does the Gandhi name mean?
Last Name: Gandhi
Indian (Gujarat, Bombay city, Rajasthan, Panjab): Hindu (Bania, Vania,
Arora, Jat), Jain, Parsi, and Sikh occupational name meaning ‘perfume
seller’ in modern Indic languages, from Sanskrit gândhika, from gandha
‘perfume’. In Gujarati the word also means ‘grocer’ or ‘pharmacist’. This
name occurs chiefly in Gujarat among Vanias and Parsis. It is also found
among the Oswal Banias of Rajasthan and among the Aroras and the Jats of
the Panjab.
