I looooooooooooooooove salads.

Here are couple of my favorites.

I don't buy store bought salad dressings. I like to experiment and make my own dressings.


Chickpeas, Tomato, & avocado salad

3 medium heirloom tomatoes
Olive oil
Vinegar
1 clove of garlic
A bit handful of arugula
1/2 cup chickpeas, cooked & drained
1/2 large avocado, diced
Juice of 1/2 a small lemon
Handful of fresh basil
Pine nuts
Salt & pepper

Quinoa Salad

1/2 cup of cooked Quinoa.
Half of diced red onion
Handful of chopped Parsley, Cilantro and couple leaves of fresh mint.
Handful of chopped spinach.


My favorite easy home made Dressing.

2 tablespoons of Olive Oil
2 tablespoons of apple cider vinegar
Lemon juice
1 tablespoon of agave nectar ( You can use honey, but agave nectar is less sweeter than honey)
