From a health perspective, the lack of gluten is great.

Julkimi, you should also soak your quinoa before cooking so that you can reduce the Phylic acid content.

Phylic acid is an antinutrient which binds to certain minerals making them undigestable.

I cant see myself eating quinoa all the time though...
