In the war you can not steal the war treasure , mutilate/torture the enemy or kill the Children/women/elders. But some of them are killed if there is a battle or raid during the night because you can't tell difference btw male and female in the dark

And I think you are talking about Safiya (RA) . she is a Jewish descendant but after the Jewish tribe lost to the muslims in khaybar she converted to Islam and if she hated the prophet then why didn't she escaped after his death (AUN). She actually stayed and contributed a lot to Islam after his death.

As for our prophet marrying Zaynab (zayd's wife RA) it was to stop the belief of Arabs not being able to marry their adopted sons. Arabs use to raise their adopted sons like their full blood offsprings (giving them inheritance , their son using their name as second name ect)
