It does ferment but not enough that it gets that tangy/sour taste, which is actually not bad. We get fresh cajiin and mix it 9/10pm and then we quick make it early in the morning 5/6/7.
Personally when it becomes to fermented I find it doesn't go too red? That gives it the cooked look. I've only really been exposed to canjeero like that in Xamar and once in the UK.

The way we make Malwax:
Plain flour (completely different flour for canjeero self-raising flour) milk, eggs, sugar, a pinch of salt and water. We add a good amount of milk.

Yikes, I like my laxoox traditional and crispy on the edges, also smothered with melted butter, and drizzling it with hot sweet, shaax.
