Here goes.

Weeks supply of Pasta sauce.

Lots of very ripe tomatoes(maybe 3lb)
2 cans of tomato paste.
1 lb ground beef (u dont really have to)
Beef broth**
2 large red onions
3 bell peppers
Garlic(i puts lots)
Salt.
jalapeno peppers (optional.

Combine in a food processor
2 onions,garlic,salt,jalapeno peppers and the tomatoes.


In a medium heat,put oil in large pot and add the remaining onion and the beef.Fry together and add the tomato paste.Add the bell peppers (usually cut them in big pieces)

Then add the ingredients in the food processor to the pot and stir.
After cooking for 10 or so,add the both and lower the heat to a simmer.

Let that baby simmer for hours as u keep adding more broth when it gets thick.

** I always make my own broth.I buy bones from and boil them with onions and whatever spices i wanna add.

I like being in control of the salt content and such.

The broth step is advanced level, mate. If you don't mind, may I just add water? If I am using 3 lb of tomatoes, how much water would I need? And how long can eat and refrigerate my suugo? Thanks.

Then buy maybe 1 litre of ur fav broth and add that.

I find that the longer i simmer,the better,meaning adding more water as u go along.

What recipes are you most interested in? Fish is probably the one thing that I cook the most.

I can honestly say I make the best suugo in the world. If you like spicy and kinda on the thick side no potatoes or peppers - that is strictly maraq ingredients in my books.

Secret - add as little oil as possible, chop your onions as small as possible and be generous, do not use tomato paste use pasta sauce instead, add the garlic when it's at least half way/three quarter way done. Do not cook with peppers if you choose to add any, it will make it bitter.


Steam veggies separately, add the cooked pasta (preferably fusilli) add a generous amount of the suugo - drench it then add some grated spicy cheese to the warm mix and let it melt. Serve with salad and a tall glass of guava juice. If you've made fish or chicken to go with it you're hitting the jackpot on awesomeness.

This is my angolan buddy's specialty

heat up a spoonful of butter on a cooking pan (high heat preferably)
chop up some onion every which way (half sliced, half diced, half skin on)
the onions in the pan
let them burn
a can of madesu (some type of beans), empty it in
add salt
a can of tomatoe paste
half a spoon of peanut butter
add some hot sauce
stir everything halfheartedly and let it simmer

In a separate pot, heat up some water, when it comes to a boil, dump a cup of cornmeal
stir vigorously until it thickens into a polenta like blob.

Eat the cornmeal with the foul sauce...Drink a glass of Ntangawisi (sweetened ginger extract) to mitigate the laab dilaac.

trust me, it's not...the best part of it is the cornmeal and it tastes like sand; he uses the cornmeal as a substitute for the regular fufu which is made from cassava

@Insomniac - Eating healthy doesn't have to be a punishment. Don't let white people and their fetish for bland kale & steamed broccoli ruin it for you, bro. It's all about adding flavor and your own touch to it. Our taste buds have been abused by years of consuming foods loaded with sodium and MSG, that's why spinach tastes like shit and we constantly crave foods ladden with ingredients most of us can not even pronounce. But yeah, it's not for everyone. I remember a time I would eat Dominos pizza at 2 AM and now just smh remembering it. Hopefully a bad case of reflux doesn't ruin it for you. The body has a way of fighting back and I see it everyday.
