What is the significance of

twirling the forefinger when sitting for the At-Taxyaat in a salat? Some ppl just extend the finger and fold it after tashahud but some would keep on twirling until they finish the salt. Is it sunnah?

No.
You're supposed to put it down once the Shahada is finished.

Actually that is what I do, but then again I see these Sheikhs twirling their finger and I get suspicious that I am missing something here.
